All Floridians, even inlanders like John, live on shark meat and banana daquaris. Well-known fact.

He's just become one of my most beloved characters just with that final panel. I also had the impression Yana knew her family was in Canada... my bad.

I take it John is writing all of this in Cyrillic, not Latin? ... Does John even know how to write Ukrainian in Latin? For that matter, would the circumstances of the refugee-camp-turned-volunteer-army have made John pick up a fair amount of Russian instead?

Yes. :P It's only the Latin alphabet because the comic's in English. I doubt he could write Ukrainian in the Latin alphabet -- I mean, he could take a game stab at transliteration, but the spelling would be awful.
I actually considered showing his writing having awful spelling in this scene, since it is, but I decided it would be too distracting. (He also can only write in block capitals -- the medic on previous pages, in defiance of all stereotype, writes in nice cursive.)
He probably speaks a weird semi-creole -- he picks up Ukrainian first, from Yana, then Russian from the other guys. Then, most of the cast is bilingual, so even if he sounds weirdly interethnic, they can all understand him.
Sorry for the long reply, this stuff is my nerd catnip, hah.
